This exceptional olive oil owes its balance to the blend of four varieties of olives typical of the AOP Vallée des Baux de Provence: Salonenque, Aglandau, Grossane and Verdale.

Cold extraction at the Moulin Castelas within 6 hours of harvest enhances the vegetal character of the olive oil and preserves the complexity of the aromas specific to Domaine Castelas.

It is characterized by its great finesse, its freshness, its herbaceous aromas with notes of raw artichoke and a slight pepperiness.
