Recipe for Mini Riste Skewers

Ingredients

  • 1 jar of Jean Martin eggplant riste 350g
  • 6 eggs
  • 50g grated gruyere
  • Black olives
  • Mozzarella balls
  • Cherry tomatoes
  • Basil

Recipe

In a salad bowl, mix the eggs, eggplant riste and grated gruyere.

Pour into a large skillet and cook like an omelette.

Once the omelette is well cooked, let it cool then cut into strips 1 or 2 cm wide.

On skewers, place a slice of omelette rolled up on itself, a cherry tomato, a basil leaf, a ball of mozzarella and finish with a black olive.
